.htaccess に FilesMatch と SetHandler なんかを組み合わせる方法がメジャーぽいけれど、以下の方法でもOKだった（ただし、Apache モジュール版の PHP でのみ）。
# .htaccess php_flag engine off AddType text/plain php
php_flag engine off で PHP を無効にし、AddType text/plain phpで拡張子が php のものを text/plain に紐づける。シンプルでわかりやすい。
